Best gift ever      I got this knife as a wedding gift 7 years ago in a set and have been using it every day...at least twice a day and it is just the best! Only after 6 years did I need to use a stone to sharpen them. I really only needed the sharpening steel. I love to cook and this knife makes prep easier and faster. It is well balanced and solid to hold without being too heavy. The only thing i noticed about the blade is that when i slice turmeric it sometimes stains the blade...but it comes out after 3 days or so of using and washing (hand wash only). I highly recommend this knife.
Great Knife      I finally decided to get top quality knife, to replace my Chicago Cutlery 8"
chefs knife (I got tired of sharpening it every other week).
It was supposed to come 5 days after it shipped, but I got it in two, it came in a nice black box, sharp and ready for work.
So far I can tell you it is worth every penny, now I can do large volume of work with little effort. Chopping, dicing, slicing etc is easy due to the heftiness and sharpness of the knife. I remember watching a video on YouTube of some guy slicing a piece of paper in very thin horizontal strips with a Shun, well let me tell you that this knife can do the same with ease.
The handle is very comfortable for me, I have large hands, but it fits perfectly well in them.
Blade is about 2 " wide, very sharp and can cut through anything with ease, for example I was able to cut onions in almost transparently thin slices. The heftiness helps a lot with cutting and when doing big volume jobs because it saves effort pushing down with the knife.
Balance is great,when I hold the knife with the pinch grip with two fingers right before the bolster it maintains perfect horizontal position. Size is also good, I didn't really expect it to have a mini-sword like look, but the definitely impresses.
Overall great knife well made and balanced, now I regret I didn't buy this in the first place but went for cheaper brand.
Another great Henckel product.      My husband insisted on upgrading our knives and this is a very welcome addition to our kitchen. It has the capability of being able to be sharpened when it becomes necessary.
A staple in my kitchen.      Henckels Twin Pro-S Chef's knifes are a staple in my kitchen. The 6 inch knife blade is my favorite. It is easy to hold, the weight and balance make preparing meals enjoyable and I feel like a professional. The edge stays sharp - Even though I should sharpen it more often than I do.
Henckels 10-inch Chef's knife      This knife has 2 noticeable drawbacks:
1) Not as sharp as it can be right out of the box.
2) Spine edges are too sharp - sharp enough to cut yourself. I will have them smoothed out.
FYI: 8-inch chef's knife suffers from the same issues.
Also: 10-inch is exactly the same weight as 8-inch. The spine of 10-inch is noticeably thinner than the spine of the 8-inch. However, after using it I cannot say it is a drawback - the knife feels right, not too light, not too heavy. There is very little flex.
That being said knife does deserve a solid 4. It is very convenient to slice hard cheeses from the large wedge - 8-incher sometimes was too small for this. You definitely need to be very careful with it and you will need a cutting board that is large enough.
