Global 7-Inch Hollow-Ground Santoku Description This 7-in Hollow Ground Santoku knife is in the shape of the traditional all purpose knife found in most Japanese kitchens. Global's version includes hollows on the edge of the blade to create air pockets between the blade and food, reducing surface tension. Fruits and vegetables, meat and fish are sliced effortlessly and with perfect precision.Loved by professional chefs around the world, Global knives are an excellent choice for the serious home cook. The majority of Global knives are ground to a straight point rather than the western style of beveling the edge. Global 7-Inch Hollow-Ground Santoku customer reviews: Wish it had the tapered handle I haven't purchased the 7" Santoku but I've tried it out. I own a 5" Utility from Global and LOVE it. The handle is not slippery. It is all one piece so easy to keep clean and very durable. I'm not so concerned about how sharp a knife is when I get it because I send them to our local bladesmith. It does hold an edge relatively well though and cuts through meat and vegetables with ease when sharp. The reason I can't give this Santoku a 5 star rating is it doesn't have the tapered handle like the one I own and my hand tires more easily with this knife than those with the tapered handles, which is extremely important to me, especially when I have a lot of prep work to do. beautiful knife - extremely sharp! a dream to use I was in the market for a 6 to 7 inch hollow ground santoku...my budget was $100 or less. I narrowed it down to 2 knives: the global and the mac. I loved both - but I liked how the global was all stainless - and i liked how it felt. I actually have the Kitchenaid Santoku - which was around $17. It cuts nicely, but the global is oh so much sharper and just feels so much better. Unlike the other reviewer, it does NOT feel slippery to me....i love the grip - i love how it feels - and it slices/chops/dieces like a DREAM. Seriously though - you have to have some respect for this knife. It is incredibly sharp so please be careful. You will wonder how long you were able to survive w/out it - and it will make chopping onions...herbs....veggies etc. seem like you are cutting into butter. It is just so smooth and it is a complete joy to use this knife. i LOVE this knife. Global knife All I can say is, "WOW"! I truly love this knife. It's sharp, easy to handle, easy to clean, lovely to use. Best Knife Ever!! we are now global fans for life. this knife is the best all purpose knife ever. Fantastic knife Fantastic knife - extremely sharp and nicely balanced. I've been using various Wusthof and Henckels knives over the years and wanted to try the Global. I am impressed and will get one or two more. The 7 in size is great for cutting and slicing...a little small and light for dicing and chopping.
