The 6 1/4 inch Hollow Ground Santoku features a straight edge and alternating grantons on each side of the blade. The knife is particulalry well-suited for fruits, vegetables, meats and cheeses. The grantons reduce friction and clinging to the side of the blade. Yes, even though the blade features an hygenic coating, it can still be re-sharpened just like any other knife. Made in Japan. For the price, a great knife. Good for beginners but not for daily use.
I bought this for my 9 yr old daughter (yes!) she had been wanting to get her own santoku and my knife was way too big for her to handle. For her once a week chopping/cutting it works just fine. I have not had to resharpen or re-tine it yet. Once that is done, I will know if this knife will hold up.
